Aloo Tikki (Potato Patty) is one of my favorite recipe and I loved it since my childhood. In my hometown Aligarh, there is a famous shop for Aloo Tikki (Ganpat) and I always miss his Tikkis.
So after thinking a lot about it when weather was cold enough in month of December (though it can not be compared to Delhi weather at any time) I decided to make Aloo Tikkis.
Aloo Tikki tastes well when it is very crisp and for that you can add bread / bread crumbs and cornflour to boiled potatoes and make a good dough.
I always make a filling for Aloo tikki, using boiled peas, green chilli, potato and a lot of spices.
Tikki can be deep fried or shallow fried, but as I said earlier, it will taste good if it is very crispy. So go ahead and deep fry it and if you use Desi Ghee then aroma and taste will double up.
Aloo Tikki can never taste good without saunth and chutney, so it is advisable to keep these handy in advance before you fry your Aloo Tikki.
Finally you can top up your Tikki with curd along with chutney and saunth and also add onion and paneer to it.
