Bise Bele Baath Masala Powder

Bise Bele Baath is an iconic rice and dal preparation from Karnataka. However, the version got in local restaurants and eateries is immensely popular due to the unique “outside” food taste that that you can get from freshly ground Masala powder. It’s taste is bit different from the ready made masala you get in the market. Of course, one can get the same taste by making a batch at home and storing it for use as need be. It hardly involves much time, just a little effort.

Ingredients

  • 1 tbsp Khus Khus
  • 3 tbsp Dry Coconut Powder
  • 4 Cloves
  • 2 tbsp Coriander Seeds
  • 1 tbsp Fenugreek Seeds
  • 1 tbsp Chana Dal
  • 1 tbsp Urad Dal
  • 1 tbsp Sesame Seeds
  • 1 tbps Cumin Seeds
  • 12 Whole Red Chillies
  • 1/2 tbsp Black Peppercorns
  • 3 Green Cardamom
  • 12 Curry Leaves
  • 1 pinch Hing
  • 1 inch Cinnamon Stick

Instructions

  1. Heat up a non-stick pan on low flame.
  2. Add the chana dal, urad dal, coriander seeds.

  3. Dry roast with constant stirring for 5 minutes.

  4. The dals will give a nice roasted aroma.

  5. Remove and keep aside.

  6. Continuing in the same pan, add the khus khus.

  7. Stir fry it for a couple of minutes only as it tends to roast quickly and might burn.

  8. Remove and keep aside.

  9. In the same pan, add the cloves, cumin seeds, cinnamon stick, green cardamoms to the black peppercorns.

  10. Let them roast till the cinnamon stick turns crisp, in about 5 minutes.

  11. Do stir continuously and remove when done.

  12. Now, dry roast the whole red chillies until there is a slight change in color.

  13. Remove and keep them aside.

  14. Add and dry roast the curry leaves to crisp.

  15. Remove and keep aside.

  16. Finally, add the coconut powder and dry roast until there is a slight color change.

  17. Let all the things cool down totally.

  18. Grind them together to a fine powder.

  19. Store in a clean, dry airtight container.

  20. Use as needed by removing with a dry spoon.
