Coconut Barfi

Since no happy occasion is complete without sweets, making an easy one makes the workload lighter without any compromise in taste and quality. Coconut Barfi is one of the easiest mithais one can choose as it can be made very rich by adding any number of dry fruits or keep it plain and simple.

Ingredients

  • 1 ½ cups Fresh Coconut (grated)
  • 1 cup Sugar (adjust as per taste preference)
  • 1 tablespoon Ghee
  • 1 pinch Cardamom Powder
  • Slivered Pistachios (Cashew Nuts, as per choice ( optional ))

Instructions

  1. Grease a cake tin or steel thali with a little ghee. Keep aside.

  2. Heat about ¾ tablespoon ghee in a non-stick pan on low heat.

  3. When it melts, add the grated coconut and the sugar.

  4. Mix them well.

  5. With constant stirring, cook on medium flame.

  6. The sugar will melt bit by bit.

  7. Then the mixture will start to bubble.

  8. The bubbles will slowly go on reducing.

  9. At the point where they stop, the mixture will turn gooey.

  10. Keep on stirring throughout to avoid burning by sticking to the base and sides of the pan.

  11. Finally, when the mixture starts to leave the sides, it is done.

  12. This takes approximately 15 to 20 minutes.

  13. Quickly add the cardamom powder and preferred dry fruits and mix well.

  14. Pour the barfi mixture in the greased plate and level with a spoon or spatula.

  15. Keep the barfi thickness as needed.

  16. Sprinkle slivered pistas or cashew nuts all over and gently press them.

  17. When the barfi is still warm, with a sharp knife, make deep markings as per the size desired.

  18. After cooling completely, the barfi cannot be cut evenly, hence it is cut at the warm stage but separated after cooling.

  19. In about 10 to 12 minutes, the barfi will cool down.

  20. Separate the pieces and store in an airtight container
