Falooda

Falooda is a must-have dessert in the hot Indian summer months. It comprises soaked sabja seeds, falooda sev, thickened and chilled sweet milk, and, rose syrup. Additional garnish ingredients are cashew nuts, pistas, tutti-fruttis, and vanilla ice cream. Variations include quite many flavors like mango, chocolate, kesar pista, orange, rabri, kulfi etc. The sabja seeds are major coolants and so is rose-petals syrup. Both help in cooling our system and provide relief from the harsh temperatures. All the ingredients required for this delicious dessert can be readied beforehand and assembled while serving. Also, the following recipe can be increased proportionally to get more servings.

Ingredients

  • 10 grams Sabja Seeds (soaked in water for 30 minutes)
  • 20 grams Falooda Sev
  • 200 ml Milk
  • 10 grams Sugar (optional)
  • 20 ml Rose Syrup

To garnish

  • 4 Pistachios (chopped)
  • 4 Cashew Nuts (chopped)
  • 4 Raisins
  • 30 grams Tutti-Fruttis
  • 2 scoops Vanilla Icecream
  • Water as needed

Instructions

  1. Boil the sev in 80 ml of water for 5 minutes.
  2. Drain and wash with cold water.

  3. Drain the soaked sabja seeds.

  4. Bring the milk to a boil and add sugar.

  5. Simmer it for a few minutes to thicken it slightly.

  6. Cool it to room temperature and then chill in the fridge.

  7. To serve, take 2 dessert glasses.

  8. Pour 10 ml rose syrup into each glass.

  9. Slowly, add the sev in both glasses equally.

  10. Next, add the sabja seeds.

  11. Pour the chilled milk into each glass.

  12. Lastly, add 1 tablespoon of vanilla ice cream scoop in each glass.

  13. Garnish with the chopped cashew nuts, pistas, raisins, and tutti-frutti.

  14. Serve them chilled.
