Fruit Cream is perhaps one of the easiest desserts to put together and on top of that since it's loaded with fruits a little bit on the healthier side as well. Summers ask for something sweet and cold on the hot afternoons and this dessert is ready in a jiffy. Kids love the cream and if adding the fruits of their choice, then nothing like it. This recipe is very flexible in that one can add whatever fruits are available, in season, liked by the family, especially the kids and as many as one wishes, be it watermelon, papaya, kiwi, muskmelon, grapes, cherries, strawberries, bananas, blueberries, mangoes, oranges etc. The choices are endless. Additionally, toss in chopped almonds, cashew nuts, tutti-frutti or even choco chips for added crunch.
- 100 ml Whipped or Fresh Cream (cold)
- 20 grams Sugar (Add only if using fresh cream)
- ½ teaspoon Vanilla Essence
- 10 Grapes (cubed or sliced)
- 1 small Mango (cubed)
- 50 grams Watermelon (de-seeded and chopped into small pieces)
- 1 Banana (sliced into roundels)
- 5 Strawberries (sliced)
- 1 Orange (de-seeded and cut into small segments)
- 10 Glazed Cherries (halved)
- 5 Cashew Nuts (crushed coarsely (optional))
Place the bowl in which the cream is to be beaten in the fridge for 10 minutes.
The whisker blades should be cold as well.
Take the whipping/fresh cream along with the vanilla essence in the cold bowl and whisk it to soft peaks.
If using fresh cream, add sugar as per taste.
The cream will increase to almost double volume.
Take all the fruits except the ones that bleed, like Strawberries, in a bowl.
Remove a little quantity for garnishing later on.
Add the cashew nuts and the glazed cherries.
Toss them gently with a spatula.
Add the whipped cream and mix gently.
Place the bowl in the fridge for some time to chill.
Serve in individual dessert bowls.
Garnish with a few of the chopped fruits, strawberry slices, and the glazed cherries.
The fruits that bleed should be added in, at serving time.
