How to Make Greek Yogurt at Home

Now, if you are wondering if this is a new variety of exotic yogurt from the land of Gods, Greece, then you are mistaken. In fact, it is a style of yogurt, that is believed to have its origin in the Middle East. Surprised? It still remains a mystery, what it is called Greek yogurt, though. So, now that you know this trivia about Greek yogurt, let’s what makes it different and more popular from your regular yogurt or curd.

While the regular yogurt is fermented with live culture yogurt for about 4-8 hours, the Greek yogurt is processed one step further by straining it for liquid whey, sugar and lactose.

Benefits of Greek Yogurt

The Greek yogurt is thicker, creamier and more refined than the regular yogurt. It is also rich in protein, almost twice its regular counterpart. However, it is quite low on calcium.  So, depending on your health or fitness requirement, you may choose either regular or Greek yogurt.

How to make Greek Yogurt

Here is a step by step guide to making about 1 – 1 ½ cups Greek yogurt at home.

Ingredients

  • 4 cups Milk preferably with rich fat content
  • 2 tablespoons Live Culture Yogurt
  • Cheese Cloth

Instructions

  1. Pour the milk into a saucepan and heat it until you begin to see small bubbles. This should take 3-5 about minutes.
  2. Next, cover the heated milk with a lid and let it cool for around 45 minutes to one hour.
  3. Whisk the yogurt culture and add it to the boiled milk in the pan. Stir the milk and pour it into a bowl.
  4. Turn on the oven to warm it for about 4-5 minutes and then turn it off. Cover the bowl full of milk with a clean towel and place it in the oven overnight.
  5. It is time to strain the yogurt next morning. Take a clean cloth, preferably a cheese-cloth or you may even use a T-shirt or a big handkerchief. Stretch the cloth over the bowl and pour the yogurt into it. You can use rubber bands to ensure that the cloth stays stretched over the bowl.
  6. Let it stay this way for at least 2-4 hours to get rid of the excess water so that you are left only with the thick creamy part. It is best to place the bowl as it is in the refrigerator during this time.
  7. Now pick the cloth carefully from the sides and place the yogurt you have extracted in an airtight container. Keep it back in the refrigerator.
  8. Your delicious Greek yogurt is ready. You can add fresh fruits, nuts or sugar to add to its taste if you so like.
