The goodness and nutrition of fresh vegetables can be enjoyed with a wholesome big bowl of fresh vegetable soup. If you are a diet-conscious person or just not in the mood to cook an elaborate meal after a long, tiring day, a quick and convenient vegetable soup would be your best food. Instead of indulging in those highly processed ‘easy-to-make’ packaged soups which do more harm than good, try this simple recipe of a butter bean vegetable soup and you will simply fall in love with it.

Ingredients

  • 1 tsp Cooking Oil
  • 2 Garlic Cloves grated
  • 2 Onions chopped
  • 1 Leek chopped
  • 2 medium sized Carrots chopped
  • 1 tbsp Tomato Puree
  • 2 Fresh Tomatoes chopped
  • 1/4 cup Butter Beans
  • Salt to taste
  • 1 pinch Rosemary Herb
  • Butter (for garnish)
  • Celery (for garnish)
  • 1-2 cups Vegetable Stock

Instructions

  1. In a cooking pan, heat the oil. Sprinkle the rosemary to add a quick flavor of this winter herb to the soup.
  2. Add the onions and garlic and sauté them over medium heat so that they get a bit roasted and give a slightly tarred taste to the soup. You should adjust the flame intermittently so as not to burn the vegetables, but to cook them up sufficiently too.

  3. Add the leeks and carrots and let them cook and blend well. Keep stirring.

  4. Now, you should put the tomato puree and sauté again till the mixture becomes brownish.

  5. Next, add the tomatoes and the butter beans. Let the beans absorb the puree.

  6. Add salt to taste. Now pour in the vegetable stock, according to the quantity you want to serve. Bring it to a boil. The vegetables must have blended well by now and the tomatoes will add a tangy taste.

  7. You can also use certain other vegetables of your choice or as per the season allows.

  8. Take some fresh celery, chop it and add for garnishing after switching off the heat. Top it off with some salted butter.

  9. This will make the soup all the more tempting and will also give it a creamy feel.

  10. Serve this fresh, hot and rosemary flavored soup to nourish your body.
