Moong Dal Dhokla

Dhokla is Gujarat's famous and absolutely loved snack that is even had in breakfast. Dhoklas are of various varieties like rice flour dhokla, besan dhokla, rawa dhokla, oats dhokla and moong dal dhokla. Moong dal dhokla is quite healthy and tasty as well due to its super-spongy texture. It adds a variety to the menu and works well as a party snack.

Ingredients

  • 125 grams Yellow Moong Dal (washed and soaked for 5 hours)
  • 20 grams Besan
  • 30 grams Thick Curd
  • 1 inch Ginger Piece
  • 2 Green Chillies (chopped)
  • ½ teaspoon Red Chilli Powder
  • ¼ teaspoon Turmeric Powder
  • 1 teaspoon Eno Fruit Salt
  • 1 pinch Hing
  • 15 Curry Leaves
  • 1 tablespoon White Sesame Seeds
  • 1 teaspoon Mustard Seeds
  • 1 tablespoon Oil
  • 1 teaspoon Sugar
  • 15 Coriander Leaves (chopped finely)
  • Water (as needed)
  • Salt to taste

Instructions

  1. Drain the dal and place in a mixer jar.
  2. Add the ginger piece and one green chilli.

  3. Grind to a smooth paste without adding any water or just a tablespoon if having difficulty in grinding.

  4. Remove in a bowl.

  5. Add the besan, curd, salt, red chilli powder, sugar and the turmeric powder.

  6. Whisk to an idli-batter like consistency by adding water as needed.

  7. Place a steamer on low flame and add sufficient water to it.

  8. Let it come to boil.

  9. Now, grease a round cake tin of 7 inches.

  10. To the batter, add the fruit salt and whisk briskly.

  11. The batter will start to rise.

  12. Pour it into the greased tin and place it on a ring placed in the steamer.

  13. Put the flame to high.

  14. Cover with a lid and steam for 10 to 12 minutes.

  15. Check with a toothpick and remove if done.

  16. To prepare the tempering, heat the oil in a pan.

  17. Add mustard seeds, sesame seeds, curry leaves and remaining green chilli.

  18. When they all splutter, shut off the flame.

  19. Add the hing and pour over the ready dhokla.

  20. Garnish with the green coriander leaves.

  21. Cut into cubes and serve hot with pudina chutney.
