Pudina Tomato Chutney

Chutneys are an integral part of Indian cooking and pudina chutney is one such chutney that is liked by people all over India. Whether you want to make chutney sandwich or chutney for snacks like pakoras or bhajiya etc, pudina is the first choice. This recipe includes tomatoes to make the chutney tangy and flavoursome.

Ingredients

  • 1 bunch Pudina (chopped)
  • 1 small Tomato (chopped)
  • 1 tbsp Ghee
  • 2 tsp Urad Dal
  • 1 tsp Coriander Seeds (dhaniya)
  • 1 tsp Jeera
  • 1 small piece Hing
  • 2 Green Chilli
  • 1 tsp Tamarind Pulp
  • 1 inch piece Ginger (chopped)
  • Salt as required

Instructions

  1. Prepare the ingredients for the chutney.
  2. In a pan, heat ghee. Add urad dal. After the color changes to light brown, add dhaniya seeds, jeera, hing, ginger and green chillis.

  3. Fry it for 2 minutes and keep it aside.

  4. In the same pan add the pudina leaves and fry it for 2 minutes. Keep it aside.

  5. Add a little oil to the pan and fry chopped tomatoes.

  6. After all the ingredients cool down, blend them together in a mixie. Add the tamarind pulp and salt and blend it again.

  7. Transfer the chutney from mixie into a bowl.

  8. Make chutney sandwich or eat with hot bhajiyas.
