Pudina (mint) has that unique fragrance and taste that brings a zing to whatever dish it is added to. Not only does it taste good, but also has numerous health benefits.
Pudina Tomato Chutney
- Pudina 1 bunch, chopped
- Tomato 1 small, chopped
- Ghee 1 tbsp
- Urad dal 2 tsp
- Coriander seeds 1 tsp (dhaniya)
- Jeera 1 tsp
- Hing 1 small piece
- Green chilli 2
- Tamarind pulp 1 tsp
- Ginger 1” piece chopped
- Salt as required
Prepare the ingredients for the chutney.
In a pan, heat ghee. Add urad dal. After the colour changes to light brown, add dhaniya seeds, jeera, hing, ginger and green chillis.
Fry it for 2 minutes and keep it aside.
In the same pan add the pudina leaves and fry it for 2 minutes. Keep it aside.
Add a little oil to the pan and fry chopped tomatoes.
After all the ingredients cool down, blend them together in a mixie. Add the tamarind pulp and salt and blend it again.
Transfer the chutney from mixie in to a bowl.
Make chutney sandwich or eat with hot bhajiyas.
