Stuffed Kulcha Recipe | How to Make Stuffed Kulcha

Flatbreads are the main part of any Indian cuisine. Being an Indian, each one of us knows very well the value and variety that comes attached with any Indian flatbread.

Though the Indian flatbreads come in a lot of variety but ‘kulcha’ is actually the king of them all! There was a time when kulchaa and naan were confined only to the households of the rich and royal people. But that is not the case today.

Kulcha is actually a famous Indian bread which hails from the North Indian cuisine. It is prepared easily but of course, with perfection using ‘maida’ (all purpose flour), salt, rising agent and water. Kulchas can be made in different forms. Butter kulcha, matar kulcha, aaloo kuclha and Amritsari kulchas are just few of the famous kulcha varieties.

Kulchas are mainly served during special occasions, parties or get togethers. You can find them readily available in restaurants, hotels and dhaabas across India. I prepare my own kulchas while throwing a party at home. Soft and laid with butter or ghee, they surely make a great combo with any vegetable curry too!

Stuffed Kulcha

Kulcha with Chole is much loved street food in Delhi and the North. Stuffed Kulcha is its variation with any number of stuffing combination, be it Potatoes, vegetables, paneer etc. The most famous and loved one is the Potatoes stuffed one, also known as the Amritsari Kulcha.

Ingredients

  • 500 grams All purpose flour
  • 3 tbsp Curd
  • Salt to taste
  • 1 tsp Sugar
  • 1/2 tsp Baking soda
  • 1/4 tsp Baking powder
  • Lukewarm water or milk as needed
  • 1 tbsp Oil
  • 4 Potatoes boiled
  • 1/4 tsp Ginger Grated
  • Salt to taste
  • Ajwain 1 pinch
  • 1/2 tsp Red chilli powder
  • 1/4 tsp Garam masala powder
  • 1 Green Chilli Chopped
  • 1 tbsp Fresh coriander leaves
  • Ghee as needed
  • 1 tbsp Black sesame seeds

Instructions

  1. For the stuffing, grate the boiled potatoes.
  2. Add the seasonings like the salt, ajwain, red chilli powder and the garam masala powder.
  3. Add the green chilli, fresh coriander leaves, and the grated ginger.
  4. Mix together everything with a gentle hand. Keep aside till use.

  5. To make the dough, take maida in a bowl. Add the salt, baking soda, and baking powder. Sieve it 3 times.

  6. Add the sugar and curd and mix well. Add the lukewarm water little by little and knead a soft dough.

  7. This dough should be softer than the regular chapati dough. Lastly smear the oil all over and cover the bowl.

  8. Place it in a kitchen cabinet or any dark place to stand undisturbed for 3 to 4 hours.

  9. After the time is up, gently knead it once more and divide it into equal size balls as per the Kulcha size desired.
  10. Using dry flour to dip it in, roll out just like rotis but quite thicker.
  11. Place stuffing in the center and bring all the edges together to close it.

  12. Again roll it to the desired size.
  13. Be gentle while rolling so that the stuffing doesn't come out.
  14. Sprinkle little of the black sesame seeds on the top side and press lightly.

  15. Heat up a tawa and roast each kulcha on low flame.
  16. When lightly golden brown on both sides, smear little pure ghee and serve piping hot.
  17. Since it's a stuffed Kulcha, it hardly needs any accompaniment except for curd or raita.
  18. Change the stuffing to mix veg, paneer etc as per preference.
  19. For baking in an oven, preheat it at 200 degrees celcius for 10 minutes.

  20. Grease a baking tray and place the kulchas ( as many as possible, depending on oven and tray size ) and bake for 10 to 12 minutes.

  21. Remove and brush ghee on both the sides before serving.
