Suji ka halwa (rawa halwa) is a dish, I have been eating from my childhood. This recipe was followed on all the festivals and whatever sweets we made, suji ka halwa was a compulsory appearance.
- 1 cup Suji
- 1 cup Sugar
- 1/2 to 3/4 cup Ghee
- 3 cups Water or Milk
- 1/4 tsp Cardamom Powdered
- few Almonds
Heat a nonstick pan and add the ghee.
Keep the flame low and add the suji while stirring constantly, roast it till slight color change.
See to it that the grains do not burn at all.
Add the water and powdered Cardamom. The Suji will slowly soak up all the water.
When all the water is soaked up, turn off the flame. Quickly add the sugar and mix it well.
Cover with a lid and let stand for 5 minutes. The sugar will melt due to the heat.
Lastly, garnish with almond slivers.
You can reduce the amount of the ghee if you are on a diet, but the real taste to suji ka halwa comes from the ghee only.
You can add cashew and raisins as well to make it bit more nutty.
