Mix Veg without onion and garlic

Many times, during fasts, one has to avoid onion and garlic. This recipe is one such that also tastes very good and is easy to prepare.

Ingredients

  • 3 large Tomatoes
  • 3 large Potatoes
  • 50 grams Paneer
  • 1/2 cup Peas
  • 2 small Brinjal
  • Salt to taste
  • 1 Green Chilli
  • 1 tsp Jeera
  • 1/2 tsp Turmeric Powder
  • Water as needed
  • 2 tbsp Oil
  • 1 tsp Red Chilli Powder
  • 10 Curry Leaves

Instructions

  1. Chop the tomatoes and grind them with the green chilli.
  2. Dice the potatoes, brinjals and Paneer cubes.
  3. In a pressure cooker, heat the oil on low flame

  4. Add in the jeera and curry leaves.

  5. Now put in the tomato mixture and stir-fry until the color changes.
  6. Add the potatoes, brinjals and the peas.

  7. Add the salt, red chilli powder, and turmeric powder and mix well.
  8. Fry for 5 minutes.
  9. Toss in the paneer cubes.

  10. Add water as per gravy consistency needed.

  11. Check and adjust seasonings as per preference.

  12. Pressure cook for 4 whistles on low flame.

  13. Serve hot with hot phulkas.
