Veg Frankie or as it also called, Kathi Rolls are one of the healthiest street foods. It consists of Roti with a vegetable roll and assorted vegetables as salad. It is also made as Non Veg with a roll of minced chicken, meat etc. These Frankies are truly versatile, as such the roll can be made as per one's taste buds, health preference , availability of vegetables etc Also, with the use of variety of sauces and chutneys, many different combinations, like Chinese, Vegan etc are also possible. Many times, one can just saute a few vegetables along with paneer cubes and roll them in the roti to whip up yummy snack for the kids or unexpected guests.

Ingredients

  • 1/2 cup Maida
  • 1/2 cup Whole Wheat Flour
  • 1/4 cup Water or as needed
  • 1 or 2 pinches Salt
  • 2 Potatoes (Boiled)
  • 1/2 cup Peas (Boiled)
  • 1/4 cup Carrot (Finely Chopped)
  • 1/4 tsp Garam Masala Powder
  • 1/4 tsp Chat Masala
  • Salt to taste
  • 1/2 tsp Red Chilli Powder
  • 1 Green Chilli (chopped)
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Cumin Seeds
  • 1 heaped tsp Ginger-Garlic Paste
  • 1/2 cup Cabbage (Shredded)
  • 1 Onion (Thinly Sliced)
  • 1/4 cup Carrot (Shredded)
  • 1 tsp Vinegar
  • 2 pinches Amchur Powder
  • 1 or 2 pinches Chat Masala
  • 2-3 tbsp Green Coriander Chutney
  • Oil as needed

Instructions

  1. For the Roti, Knead the maida, whole wheat flour, salt using water as needed.
  2. The dough should be soft. Let it rest for 10 minutes.

  3. Heat a Tawa on low flame. Roll out 4 to 5 rotis as per size preferred. Roast each on low flame till cooked on both sides. Ready all rotis similarly and keep aside.

  4. For the stuffing- Mash the boiled potatoes. 

  5. Heat 1 teaspoon oil in a thick bottom pan and add the cumin seeds and Ginger-Garlic paste. Fry for few seconds till the seeds splutter.

  6. Add the peas, carrots and saute for a couple of minutes.

  7. Add the mashed potatoes and seasonings like green chilli, salt, red chilli powder, turmeric powder, garam masala powder, chaat masala.

  8. Saute for a few minutes and then shut off the flame.

  9. Let stand till cool enough to roll into 3 to 4 inches cylindrical rolls.

  10. Stir fry them in little oil on an iron tawa or a non-stick pan.

  11. Use up all the mixture to make rolls.

  12. To ready the Frankie, take the salad ingredients like the sliced onion, shredded Cabbage, and carrot.

  13. Sprinkle the chat masala and amchur powder and drizzle the vinegar and toss well.

  14. Assemble the Frankie by taking a roti and then spread about 1 teaspoon of coriander chutney all over.

  15. Place 1 to 2 tablespoon of the salad on the top of the roti. Leave around half inch space on the bottom.

  16. Roll all the roti edges tightly towards the center. Wrap this folded up Roti with an aluminum foil.

  17. This makes it easier to serve. Ready all the Frankies in a similar way.

  18. Serve with any chutney and tomato sauce / Ketchup.
